MEAT CUTTER/BUTCHER

As we prepare to open a brand new 10,000-sqft processing facility in Maxwell, Indiana this June, we are seeking hard working folks with a passion for good local food to join our tight-knit team. This is a unique opportunity to get in on the ground floor and generate real, meaningful impacts each day as we develop together.

We are looking for a meat service specialist with strong experience ranging from whole carcass breakdown all the way to the fabrication of retail cuts.  Training on our products and processes will be provided, so this position is ideal for a butcher looking to broaden their skillset.

To succeed at this position, you should be courteous, knowledgeable, and detail-oriented. You should have excellent communication skills and a strong understanding of meat quality, cuts, and preparation.

Job Responsibilities and Duties:

  • Receives and breaks down animals
  • Receiving of animal on drop off days (Sunday and Early Monday)
  • Collecting proper paperwork for animal.  Ensuring that drop off and processing sheet is turned in and accounted for in the managing office
  • Prepares and operates saws, mixes, tenderizes, weighs and packages products.
  • Cuts, trims, de-bones, ties, grinds and curing and smoking of meats.
  • Cleaning and maintaining tools and equipment ensuring superior hygiene, health and safety standards.
  • Weighing, wrapping and boxing meats.
  • Transferring tubs/barrels of meat into large containers for indelible pick up.
  • Weighing, packaging, pricing, and displaying products.
  • Greeting and speaking to customers, providing advice, answering questions, and accepting orders or payments.

Qualifications:

  • Prior Meat Cutting/butchering experience preferred but not required
  • Certified in HACCP and Humane Slaughter a plus.
  • Must be 18 years of age and older.
  • Knife experience or the ability and willingness to learn the methods and requirements of cutting.
  • Must be willing to work in a cold/hot and damp work environment.
  • Agricultural background with experience working with livestock is a strong asset.
  • Knowledge of primal and sub-primal beef cuts is an asset.
  • The ability to stand for long periods of time on concrete floors is essential to success in this work environment.
  • Work in an area where livestock is being killed.
  • Neutral wrist-Repetitive hand motions and grasping.
  • Work in areas that require you to lift, pull, or push 50+ lbs.
  • Work with sharp knives and saws.
  • Willing and capable of working overtime when necessary.
  • Willing and capable of working in or around bloody areas, in a fast pace work environment, performing repetitive hand motions and body movements. Physical demanding jobs may take 5 to 6 weeks for the body to fully adjust to the work conditions, work environment, and job descriptions.
  • Develop positive working relationships with all departments to facilitate a TEAM oriented atmosphere.
  • Strong communication, task management, and customer service skills.

Important Qualities:

Concentration.  Butchers and meat cutters must pay close attention to what they are doing to avoid injury and waste of product.

Customer-Service Skills.  Those who work in retail stores should be courteous, be able to answer customers’ questions, and fill orders to the customers’ satisfaction.

Manual Dexterity.  Butchers and meat cutters use sharp knives and meat cutting equipment as part of their duties. Therefore, they must have good hand control in order to make proper cuts of meat that are the right size.

Physical Stamina.  Butchers and meat cutters spend hours on their feet while cutting, packaging, or storing meat.

Physical Strength. Butchers and meat cutters should be strong enough to lift and carry heavy boxes of meat, which often weigh up to 50 pounds.

Training. Butchers and meat cutters typically learn their skills on the job and the length of training varies considerably. Training for simple cutting may take only a few days. However, more complicated cutting tasks generally require several months of training. The training period for butchers at the retail level may last 1 to 2 years.

Work Schedules. Most butchers and meat cutters work full time. Butchers who work in grocery or retail stores may work early mornings, late evenings, weekends, and holidays. Meat cutters who work in animal slaughtering and processing facilities may work shifts that start in the early morning or in the afternoon or evening.
